Only six out of more than 200 restaurants earned highest rates for food in this edition of The Truffle. Those who made the list are mostly the restaurants that for years keep up the highest standards of cuisine, selection of ingredients and presentation for a long time, drawing passionate and wide following. There are also a few restaurants opened realtively recently, whose chefs set new rules of creativity and excellence for Croatian restaurant scene.
Dubravkin put, Zagreb
Dubravkin put is the best restaurant in Zagreb. Its cuisine flourished when the kitchen was taken over by Swiss-Canadian chef Priska Thuring. Her style is simple yet creative and based on Mediterranean ingredients for lunch, while in the evening it transforms into the only haute cuisine in Zagreb.
Chef Daniel Đekić’s playful research of local ingredients, textures and techniques results in Monte’s dishes of striking beauty and impressive tastes that stay in memory for a long time.
The trademark of Paradigma is Chefs Ante Udovičić author’s touch, based on imaginative Mediterranean menu premeated by gastronomic traditions of Southern Italy, Greece, Spain, Provence, Adriatic coast and Eastern Mediterranean.
Pelegrini has been the best restaurant in Dalmatia for years, and certainly is one of the best in the country. Repeatedly named the best Croatian chef, Rudolf Štefan reinterprets traditional local recipes in sensational style, literally creating a new Dalmatian cuisine.
Plavi podrum, Opatija
The only Croatian restaurant that entered San Pellegrino’s 100 Best Restaurants of The World (2011.). Impeccable selection of ingredients. Scampi, fish and white truffles are treated according to modern culinary practices or prepared very simply. The wine list is one of the best in Croatia.
San Rocco, Brtonigla
San Rocco’s inspiring menus are based on local terroir, season and top ingrediends such as white Istrian truffle. Laid back, luxurious atmosphere of this place are a definition of splendid isolation.
