They chop their tuna for tartare, they don’t mince it, reminding us of best times at Volosko’s Tramerka, when chef Andrej Barbieri was in charge there. Sardines in savor come with pine nuts and raisins, as in original Venetian recipes; bonito with veggies is served in a “real” tin can, like those they used to serve crab salads at Valsabbion restaurant. Sea prosciutto made of fresh sea bass is coloured with beets and served with pickled samphire. Dorade cooked in saffron and fish baked in fig leaves are only some of the many original dishes at this newly opened, long awaited place in Fažana, a true “fish manufacture” as its Italian name says. Freshness of ingredients, creativity, balanced flavours and interesting presentation unfold inside a miniscule Venetian style trattoria, with an old wheel-barrow full of fresh rosemary, basil and mint at the front door.
