When you come to Sole for the first time, you won’t be overcome with enthusiasm. There is an anarchic parking site in front of the tavern, with a terrace that used to be a terrace only to be closed again. The entrance is shabby, the walls are an attempt in some kind of fresco painting and the furniture is modest. Then comes the waiter. Everyone is a family here, in the room and in the kitchen. It takes forever for friendly waiter to recite all Sole has to offer: five or six kinds of shellfish, wild dorade, sea bass, scampi, meat, truffles…then he kindly offers to assemble a menu that suites you best, and finally – execution!  Plating gives away an old-school cook. But raw sea bass covered with raw Ceasar’s mushrooms and cepe leafs, fusi with scallops, oven-baked dorade and chocolate semifredo with peperoncino, show a master of old-school cooking.
