Just after you live Umag tennis courts, heading to cape Savudrija, there is Toni restaurant, founded 1970. in a small fisher’s village of Zambratija. Founder’s son Paolo Paoletić is obsessed with the sea. It’s showing in his paintings covering the tavern’s wall, in his cookbook titled My fish cuisine published few years ago, and more than anything in his dishes. Freshness and minimal intervention are Paoletić’s credo, and imaginative fish appetizers so delicious that you want to stick to them for a whole meal. Marinated squid in pear petals, risotto with zucchini cubes, sun-dried tomatoes and squid tentacles, baby cuttlefish in refosco and scores of salted, prickled and smoked seafood are great, just like seafood in oil, vinegar, lemon and wine… Wine list is very selective, with only 50 or so wines.
