The pioneer of Istrian truffling, Giancarlo Zigante, has from the first days of his work managed to keep the level of his restaurant at an impressive height. This has often been tied to many staff changes. Chef Damir Modrušan returned again recently, giving the restaurant an extra boost. He places truffles on the pedestal that they deserve, he doesn’t make them banal, and does not grate them all over the place. He only uses fresh black and white truffles, depending on the season, and imaginatively researches the most creative combinations to launch them into the domain of high cuisine: tortellini with beetroot pastry filled with cream of white beans and fresh truffle, a pyramid of apple with foie gras, spinach foam and fresh truffles, crispy curd dumplings with black truffle…
